This is a simple dish packed with nutrients, it is liked by all age groups and goes well with Chapathi and Roti. I love to prepare this often as it is less time consuming and tasty too.
1 cup Aloo/Potaotes cut into chunks
1 cup Capsicum diced
1 cup Gobi/Cauliflower cut into chunks
1/2 cup Soya Chunks
4 or 5 green chillies chopped finely
1 cup Onion chopped finely
1 cup Tomatoes chopped finely
2 tsp Dhania powder
1/4tsp Turmeric powder
1/2 cup fresh coriander leaves
Soak soya chunks in water for 10 mins or so, squeeze the water out of soya chunks. Heat 2tbsp oil in a pan, add chopped onion and finely chopped green chillies. Fry till the onions turn golden brown.
Add chopped tomatoes, turmeric and fry till the tomatoes are well done, mash the tomatoes with the spatula. Now add Dhania powder, salt according to taste and fry for a min. Add the vegetables and soya chunks, mix well and cook till it turns tender. Switch off the stove and garnish with coriander leaves.
Your simple and tasty sabzi is ready to serve.
