Aloo Palak Sabzi

Aloo Palak Sabzi is a very tasty sabzi and is a great combination for Dosa. Aloo palak or Potato Spinach sabzi is easy to prepare. This sabzi goes well with rice too.

Ingredients:

1.5 cup Aloo/Potaotes boiled and mashed

1 cup Palak/Spinach chopped

2 or 3 Green Chillies chopped

3/4 cup Onion sliced

2 or 3 large Tomatoes chopped finely

2 Cloves powdered

1/2tsp Chilli powder

1/2tsp Dhania/coriander powder

1/2 tsp Turmeric powder

4 or 5 cloves of Garlic chopped or crushed

1/2tsp Mustard seeds

One or two strands of curry leaves

Coriander leaves

Salt

Oil

Method:

Take oil in a pan, add mustard seeds and let it splutter. Add chopped or crushed garlic to it, once it turns golden colour add powdered cloves, green chillies and curry leaves to it. Curry leaves can be added at the end too. Next add onion and fry it till translucent, add chopped tomatoes to it. When the tomatoes get mushy add turmeric powder and mix well. To this add chilli powder, dhania powder and mix well.

Now add chopped palak/spinach leaves, salt according to taste and let it cook for a few mins. Mashed aloo/potatoes comes at last. Add mashed aloo to the palak mixture, mix thoroughly, check the consistency and add water accordingly. Let it cook for a few mins on slow fame. Let the potates take in all flavours. After a few mins switch off the stove and add coriander leaves to garnish your aloo palak sabzi.

Serve it with Dosa.
